Each week he takes a different technique and shows five delicious dishes using that technique. The recipes range from the simple to the ambitious. Raymond delivers them all with a passion and enthusiasm that belies his years at the top.
This time he explains frying - cooking in fat or oil. For Raymond it's a great quick technique that gives food a wonderful flavour, colour and texture. He starts with a simple French favourite, pan-fried pork chop on saute potatoes, a dish he dedicates to his mum because she has cooked it so often. He conjures up a surprising stir-fried salad as a delicious alternative to the usual summer staple. His dessert is an incredible pan-fried Grand Marnier souffle with an orange sauce.

The showpiece event of the Scottish football season sees Derek McInnes's Aberdeen take on Brendan Rodgers's Celtic for the oldest national football trophy in the world.
The Dons last lifted this trophy in 1991, when they defeated today's opponents in the first ever Scottish Cup final penalty shoot-out after a 0-0 draw over 90 minutes of normal play and 30 minutes of extra time. Brian Irvine converted the vital kick to give Aberdeen their seventh Scottish Cup victory. Meanwhile, Celtic are the most successful club in this competition with 36 wins, their last victory coming in 2014 when they beat Hibernian 3-0.
Brendan Rodgers will be hoping to secure his place in Celtic history today. Victory would land him the last leg of a domestic treble which has only been achieved by two previous Celtic managers - the legendary Jock Stein and more recently Martin O'Neill. The achievement would carry added significance as it is almost exactly 50 years since the Lisbon Lions lifted the European Cup.
Derek McInnes has consolidated Aberdeen's position as the second force in Scottish football in recent years. They finished runners-up in the Premiership title race and have already been to one Hampden final this season, losing 3-0 to Celtic in the League Cup. The Pittodrie side last lifted a trophy in 2015 when they won the League Cup, and will be looking to take more silverware back to the Granite City today.
